
Guest Chef Dinner at Easy Bistro with Bill Briand
Chef Briand has honed his skills over the last 30+ years in kitchens throughout the Gulf Coast. When he was 20 years old, he began his culinary career at Emeril’s in New Orleans, and through determination and grit, Chef Briand worked his way up the ranks in the kitchen. Following Emeril’s, he gathered extensive knowledge in animal butchery and curing techniques while at Cochon. Chef Briand then moved to Orange Beach, AL where he became the Executive Chef of Fisher’s at Orange Beach Marina — a position he held for 10 years, winning multiple James Beard nominations for Best Chef: South. Throughout his career, Chef Briand has built lasting relationships with local farmers and fishermen, allowing him to showcase these ingredients through the thoughtfully crafted dishes he’s become known for, while also embracing the memories and traditions of the food from his youth. Currently, Chef Briand is preparing to open his own concept in Fairhope, AL early next year — the restaurant will be called Little Bird, in homage to his late mother, Virgnia Eilleen.
